These protein-rich collagen pancakes are both satiating (protein helps keep you feeling fuller for longer) and skin + gut-friendly recipe!
In this recipe, I used Great Lakes' "Collagen Hydrolysate" (Pasture-Raised and Grass-Fed), but any other collagen you have on hand should be able to be substituted.
Yield: 2 Medium Pancakes/4 Mini-Pancakes
Ingredients
1 C Oat Flour
2 Eggs
2 T Collagen
2 T Honey
Method
1) In a food processor, pulse on high all the ingredients.
2)Use coconut oil for a light coat on a frying pan on medium-low to medium heat and pour batter. Cook as you would a normal pancake!
3) Notes: I like a thicker batter, but if you need to use a liquified, you can opt for a splash of alternative milk (e.g. almond or coconut). Also, I like to garnish mine with strawberry slices and a drizzle of raw honey--yum!
