Dark Chocolate Collagen Pudding (Keto, GF)



This week, I'm trying out a recipe by Mind Body Green (*I substituted raw honey instead of maple syrup, and used more (x2) of 90% vs 100% dark chocolate to achieve a richer flavor) that is decadent and satisfies those sweet cravings, yet high in antioxidants from the dark chocolate and glow-inducing due to its collagen.

  • Prevention of Bone Loss

In this recipe, I used Great Lakes' "Collagen Hydrolysate" (Pasture-Raised and Grass-Fed), but any other collagen you have on hand should be able to be substituted.


If you're looking for the best type of collagen for that glow, Collagen Type I (abundant in Marine Collagen) as well as Type III (e.g. Bovine Collagen Peptides.




 

Ingredients

1 Can of Coconut Milk (400mL/16 oz)

10g 90% Dark Chocolate (I used a grater to create chocolate shavings - I also reserved some for a tasty garnish)

2 T Grass-fed Collagen

1 T Tapioca Starch

2 T Raw Honey


Method

1) Place milk + starch in a saucepan and whisk constantly until it reaches a gentle boil. Reduce heat to low, or turn it off.

2) On this low/residual heat, add the chocolate + collagen + salt + raw honey.

3)Continue whisking until everything is dissolved/melted. Remove from heat and plate.

4)Refrigerate for at least 2 hours and enjoy. Garnish can includes chelate shavings or a sprinkle of sea salt flakes for a contrast to the sweetness of the chocolate (e.g. Maldon).
