Ingredients:
4T Coconut Flour
4T Ground Flaxseed
2*3/4 C Water
Pinch of Salt
2 Large Eggs (beaten)
2 T Coconut Milk
Garnished w/ wild blueberries, coconut flakes + almond flakes
Method: 1)Gently heat over medium heat the: coconut flour, flaxseed, water and salt in saucepan until mixture reaches a simmer and thickens.
2)Remove saucepan from heat and add beaten eggs while whisking gently. Put saucepan back on heat and stir gently until eggs cook (do not whisk quickly, or at high heat, or mixture will become scrambled).
3) Remove from heat, plate, and garnish as desired.
