Ingredients:
Date Paste:
10 Dates (or 12 for more sweetness, but I prefer to stick to the minimum to lower the GI effect of sugar) and enough hot water to cover.
1 T Chia Seeds
1/2 Cup GF Rolled Oats
1/2 Cup Almond Flour
1 C Coconut Flakes (I used freshly grated coconut, but store-bought desiccated coconut flakes work as well)
1 T Matcha Powder (I used "Organic Spiced Turmeric Matcha" from MightyLeaf for the added health benefits of turmeric, cinnamon and ginger)
Juice of 1 Lemon
Pinch Black Pepper
Method:
Date Paste:
Put dates in a bowl, and add very hot (boiling) water. Just enough to cover. Let rest.
After the dates are soft, use a food processor to blend dates with as minimal of the water of the soaking water as possible to reach a paste-texture.
Meanwhile, in a food processor (I used a Vitamix), blend the chia seeds, rolled oats, almond flour, coconut flakes and matcha powder, until it reaches the consistency you want for your bliss balls.
Place this dry mix in a bowl and add the date paste as well as just enough lemon juice to make a 'dough' for your balls. Add a pinch of black pepper. You can also roll in the bliss balls in any remaining coconut flakes you might have leftover. Enjoy!
